Ultimate Pretzel Crusted Peanut Butter Cookie Candy Brownie Bars

Another Monday here. Gosh I hate Monday's! The nice thing about this Monday is that Connor did not have school today, so only one person in the house had a "Monday" today. Tomorrow Connor will have his "Monday" but at least mine will be over, so it shouldn't be to bad. Monday mornings are usually pretty hectic with trying to get ready for the week and then usually everyone is pretty crabby, so it's nice to have a "slower" paced Monday to start off my week.

So a few weeks ago for dinner at Aunt Missy's I made a dessert that I found off of Pinterest. The original recipe came from HERE and the moment I saw it I knew I had to make it. OMG. I have now dubbed this dessert "fat kid heaven". Not to offend anyone, I like to joke around and say that I eat like a fat kid because I love desserts, and if I let myself I would eat way to much all of the time. This is by far the best thing I have ever tasted. It has such a great combination of crunchy/salty and lots and lots of peanut butter (my favorite thing of all time). However, the downfall is the price of making this. I usually try to go fairly inexpensive when making things, but in order to really try this out I followed the name brands and everything. Next time I make it I'm going to try and go a little "cheaper" and make my own peanut butter cookies and maybe even brownies too. Hopefully it'll be just as good!

Peanut Butter Banana Smoothie

Wow, what a crazy last week it's been. The kids have been sick on and off, which means horrible sleep, which means a super crabby Amber. Tonight they seemed pretty good, so I'm hoping this sickness is finally leaving this house! (crossing my fingers and toes)

So for breakfast yesterday & today I decided to try a new recipe off Pinterest (originally came from HERE) . I've been eating really crappy food lately, so I really need to get back in and focus on eating healthier. I love banana's and I love peanut butter, so what other better way to start the morning than a Peanut Butter Banana Smoothie! I followed the recipe exactly, except I used Vanilla Almond Milk. OMG, I think I've found my new signature breakfast. I didn't think it would keep me satisfied, but it filled me up and kept me going until lunchtime! I will definitely be making this again!

Zuppa Toscana Soup

Both kids are sick - not fun! Savannah got sick on Monday, so I ended up staying home with her that day. Tuesday she was well enough to go back to Grandma's, then today Connor started getting sick at 3 a.m. and Savannah got sick at about 7 p.m. Both have been fine since then so I'm hoping (cross fingers & toes) that they are both going to be done with this! I hate when my babies are sick but the worst is when you can tell they don't feel good because their eyes are all watered up, that was the look on Connor's face all day today.

So on Monday I decided to try a new recipe that I found on Pinterest. The original recipe came from HERE. The only thing I changed in the recipe was how I cooked it. Cooking things on high for only 3-4 hours in a crock pot really isn't an option for me, so I turned it on low at about 7:30ish a.m. I took the first bowl and ate out of it at about 3:30 and it stayed on till 5:00ish when everyone was done eating. I thought this tasted really good however I felt the kale seemed a little overcooked. The potato's and sausage seemed perfect, so if I were to make this again and it was an option, I'd probably throw the kale in about 1/2 way through instead of at the beginning. Either way, I'm sure I'll make this again! It's not quit as great as Olive Garden's soup (but maybe that's because I didn't have the yummy bread sticks to go with it), but it's definitely good enough to make again!

Chili Dog Casserole

So I've decided I'm going to start skipping around in the blog, instead of just going in order of things happening. Why? Because some of the things I forget how I felt about them (recipes, movies, books, etc) more easily than the really cool stuff that me & the kids do together. So in order to do a better "mini" review on things, I am giving myself the right to skip around once and awhile!

On that note, last night for dinner I made a Chili Dog Casserole. I originally found the recipe on Pinterest, which originated from THIS blog. Ingredients: 2-15oz cans of chili (I used one "normal" can of chili with beans and one can of spicy without beans), hot dogs (yes, I buy the $.79 ones at Woodmans cause I'm cheap, lol), tortillas, and cheese (I used a mix of Colby & cheddar). Okay, I know this definitely is not the most healthy thing I've ever made but on a lazy Sunday night it was just what I needed. With having the one can of spicy chili in there it gave the whole thing a nice little kick without being overbearing, so the kids could still eat it. Justin ended up coming over for dinner and I still have enough for 2 lunches (well 1 now since I ate one today). This recipe will be put in the "make again" category!

Peanut Butter Dip

I know, I know. It's been FOREVER since I've posted. I'm sorry. There has just been a lot going on lately. But I will try to get things updated as quickly as I can. School started last week, and although I dropped one of my classes, I still have 2 fairly high demanding classes so don't hold it against me if I slack once and awhile!

So a few weeks ago I find a recipe on pinterest I knew I just had to try. The recipe originally came from HERE and I knew the kids would just love it and I was right! I also enjoyed it (but when don't I enjoy something with peanut butter in it?). It is such an easy quick dip to make for your kids to dip their fruit in and it is now something I will keep stocked in my house.

Egg and Cheese Puffs

So the kids had their final swimming lesson last night. Savannah ended up staying home with me though because she has a slight tummy ache. So far so good today, but I don't want to curse it by saying she's better yet. Connor was in his second round of Dolphin/Preschool-2 class and he still didn't pass. But it's okay, he made some great improvements. Last time he had half of the 20ish check list things that he needed to work on this time it was only 4.

So a couple of weeks ago for work we had a pot luck. I made some of my Chocolate Chip Zucchini Muffins but for Scott I decided to try a new recipe, so I went to allrecipes.com and found THIS recipe for Egg and Cheese Puffs. I followed the recipe exactly and they were a big hit. The recipe actually made several more than it stated it would so there where plenty of leftovers. I actually popped a small bagful in the freezer for later. Word of advise, use the metal liners for them. A bunch of people in the comments section said that without putting a liner they stuck really bad, so I used regular liners....and they still stuck really bad. A co-worker said to try the metal ones, so I'll do that next time I make these.

Puppy Chow

So Scott & Matt went to go see the new Batman movie tonight, so it's just me and the kids at home. We played in the basement for awhile (while I tried to start organizing the disaster that it is) then we ran to Copps to get the kids some Popsicles, now the kids are watching Peter Pan and I just finished reading a book. Pretty uneventful Friday night, but it's nice.

So for camping I decided to make some Puppy Chow. I've never made Puppy Chow before, so I went to allrecipes.com and found THIS recipe. It made a lot more than I expected, I didn't follow the recipe exactly, I think I ended up putting a little bit more of everything into it but it turned out great. That's something I probably shouldn't make to often because I might just sit and eat the entire thing! Yumm! It is a great snack though to have while you're camping, so next time we're camping I'll be sure to make this again.

Blackened Fish Salad

So tomorrow my baby turns 5 years old. Where on earth did the time go? I might cry tomorrow....... We're doing the usual birthday tradition, pictues, zoo, dinner, and we also have to run out to Aunt Missy's to celebrate Lily's Birthday (Monday is her actual birthday).

Working my way through my favorite cookbook, on page 59 of Taste of Home: Simple & Delicious is the recipe called Blackened Fish Salad. Ingredients: cajun blackened grilled fish fillets, deli pasta, baby spinach, and parmesan cheese. We used THIS pasta salad (my all time favorite!!!) and we actually forgot to put the parmesan cheese onto it (didn't realize until a couple of days later when we were having spaghetti and Scott went to use it and it hadn't been opened yet, oops!). I really enjoyed this recipe but unfortunately no one else in the house did. Scott isn't a big fan of the fish, and the kids devoured the pasta part of it they barley touched the rest of it. I hope I can convince them to make this again, but I might not be able too.

Nacho Chicken Pitas

What better way to spend a Saturday night then cleaning the house? Right? Lol! That's exactly what we're doing. Cleaning for 10 minutes, breaking for 10 minutes. You'd be surprised at how much you can get done in 10 minutes. Neither Scott or I are very good at keeping the house clean, so in order for us to get anything done we have to take it in brief periods.

So we're slowly working through my favorite cookbook "Taste of Home: Simple & Delicious". This time we tried Nacho Chicken Pitas on page 48. Ingredients: Egg, Nacho Cheese Tortilla Chips, Chicken Breasts, Mayo (not on mine), Pita Bread, Lettuce (right out of the garden!), Tomato, and Mozzarella Cheese. OMG, this tasted so good! I absolutely loved it. The pita bread however was hard to work with, it didn't seem like I could get very much inside of it. I think next time I'll take the same basic ingredients but make it more into a salad. I really do not like Nacho Tortilla Chips, but the way it was used for breading on the chicken was so yummy!

Quicker Chicken 'n Dumplings

Well happy 18 month birthday Miss. Savannah! Can't believe it's been 18 months since you were born! It's amazing how quickly you grow and how much of your own person you are. She is so stubborn at times, so independent at times and yet way more cuddly than Connor was at this age. It's amazing how different siblings can really be.

So awhile back I tried another recipe out of my Taste of Home Simple & Delicious Cookbook - pg. 30, called Quicker Chicken 'n Dumplings. I love chicken and dumplings and really wanted to try this out. Ingredients: chicken broth, celery, carrots, bay leaf (didn't use one), dried parsley, biscuit mix, dried thyme, nutmeg, milk, & cooked cubed chicken. The recipe turned out really yummy, however I did not have to cook it nearly as long as the recipe calls for. Not sure why but I ran out of broth way before it was time but thankfully everything was cooked and ready to eat. I will definitely be making this again in the future though!

Peanut Butter Chewy Brownies

How's everyone doing tonight? I'm actually rather bored. I really do not feel like watching wrestling anymore (I'm so sick of it) and I really just need some "girl friend" time but unfortunately it seems like I have very limited friends........all of which live too far away or are busy with their kids. They're probably being good mama's and putting their kids to bed/playing/reading with them...... where as right now I don't feel like dealing with mine.........ugh.........I know, I'm a bad parent........ book club is less than 2 weeks away, can't wait, need a break!

So recently a co-worker gave me a recipe for Peanut Butter Chewy Brownies. She got it out of a magazine that she gets. On the bottom of my sheet it has the website for Penzeys but I could not find this particular recipe on there. Ingredients: peanut butter, butter, sugar, brown sugar, egg, vanilla extract, flour, baking powder, salt, and chocolate chips. I love peanut butter and I love chocolate so I assumed I would love these. They were pretty good but I almost think they had to much chocolate. I think if I make these again I would probably cut the amount of chocolate in half. But other than wanting to make that one change, they were pretty tasty!

Black Bean Taco Salad

So Scott is officially done for the semester, and he received a 4.0. I am almost done, I have until Tuesday night to finish up everything. I still have 2 small assignments, a large project and a test. I just finished up reading the last chapters in one of my books and I'm about to watch two small videos but then I'll leave the rest for the next four days - should be able to finish it no problem!

So recently I once again turned to my cookbook - Taste of Home : Simple & Delicious, on page 44 is a Black Bean Taco Salad. I saw this recipe and immediately thought of Scott (he LOVES taco's). Ingredients: ground beef, lettuce, tomato, black beans, Catalina salad dressing, and nacho cheese chips. I do not like nacho cheese (Doritos) chips, so instead I just used some plain tortilla chips I had that I eat with my salsa. I'm not sure if it's because I used different chips but I did NOT enjoy this recipe. Maybe it was the dressing? I'm not sure. Scott used regular Doritos and he seemed to enjoy it, so maybe that was my problem? Either way, I don't think I'll be making this again anytime soon.

Barbecue Beef & Potatoes

So today is mine & Scott's anniversary. Cant' believe 4 years ago we got married, where does the time go? To celebrate we took the day off of work and we're just going to get stuff done. Scott is going to get the oil change done on my car and I'm going to plant our garden! Later we're going to pick Connor up from school, grab some McDonald's and go to the park and play for a few hours - and then hopefully get a nap in (I love naps!).

So awhile back I turned to a cookbook I've had for awhile (the picture is not the exact one I have, I couldn't seem to find it online - I purchased it from my cousin for $5 as one of those school fundraisers so it's really little but has a variety of recipes in it). I made Barbecue Beef & Potatoes - more for Scott than me as this is more of a "him" meal. Ingredients: potatoes, ground beef, green bell pepper & BBQ sauce. I'll say it was okay I guess. Nothing specially and I really do not like green peppers. It's not something I would make if I got to choose but if Scott really wants it again I'll make it for him.

Taco Puffs

I was going to try and help Scott out tonight and mow the lawn but unfortunately the mower had gotten to wet and can't start - so it needs to dry tonight - maybe tomorrow? I think tomorrow is the only other opportunity we'll have for awhile because I believe it's suppose to rain the rest of the week. I really hope it doesn't rain much this weekend because it's the city of Sun Prairie garage sale and I want to sell a bunch of our stuff!

So a few weeks ago, I turned once again to my favorite cookbook - Taste Of Home - and turned to page 16 and made Taco Puffs. Scott LOVES tacos so to change things up a bit I figured I would try out this recipe. Ingredients: ground beef, onion (I didn't use any), taco seasoning, large biscuits & cheddar cheese. They turned out really tasty but not as pretty as the picture shows them to be. I think next time I would try and make it in a large bake pan and just make it more like bars instead of puffs. Either way, it was worth making them, and we will be making them again -yumm!

Zucchini Brownies

So this weekend is going to be full of homework, not fun! I have a huge project that is due tomorrow night and I just started it yesterday - however I do have 2 of the 7 sections done already, so hopefully if I just spend a couple hours today and tomorrow that should be enough. Only a couple of more weeks left of the semester then I can take a couple of week break before it starts all over again!

So almost three weeks ago now Aunt Missy had a bunch of the family over and I turned to my favorite cookbook - Taste of Home to use a recipe to use up some of the zucchini I still had left in my freezer. On page 228 you will find a recipe for Zucchini Brownies. butter, sugar, eggs, yogurt, vanilla, flour, baking cocoa, baking soda, salt, and shredded zucchini made up the brownies and there was frosting on top which consisted of chocolate chips and peanut butter. I never actually got to try the brownies but considering that most of them were gone in a short amount of time I'm assuming they were pretty tasty. I will definitely consider making these again in the future.

Guacamole Chicken Wraps

Finally finished putting together the TuTu I've had waiting for awhile. 1/3 Pink, 1/3 Purple, 1/3 Yellow = Spring TuTu. It's super cute. I might have Savannah wear it for our Easter pictures that we're getting done this Saturday at JcPenney's, but I'm not 100% sure yet.

Recently I tried another recipe out of my Taste of Home cookbook - Guacamole Chicken Wraps - pg. 118. Ingredients: guacamole, spinach tortillas, salsa, Mexican cheese, southwestern chicken strips & lettuce leaves. I couldn't find regular spinach tortillas at the grocery store but I did find some garlic spinach, so that is what we used and for the Salsa we used THIS. These were SO GOOD. OMG. I want to make them again already! Next time though I wont try and eat 2 of them because I was super full!

Strawberry Apple Pie

Got to see my baby brother today, yay! I don't get to see him often enough but I love when I get to see him & his family. It was a great day, I wish it would have been warmer like it was earlier in the week but oh well, still well worth the hour drive up north!

Awhile ago I tried a new recipe, a Strawberry Apple Pie. Its ingredients include: granny smith apples, strawberries, lemon juice, sugar, flour for the pie, then the crust stopped with sugar & ground cinnamon. I made the pie to take over to Aunt Missy's and according to Scott it was wonderful - so I'm going to say this recipe is a keeper. I got the recipe from page 224 of my favorite cook book - Taste of Home.

Chili Cheese Fries

Our usually Saturday is almost half way done already. Karate, Library, followed by a little TV time to relax in the morning. I finished watching Private Practice on the computer (anyone else have problems DVR'ing it the other day?) Now we're making some lunch and maybe going to take a nap before going to the grocery store and then Scott has bowling tonight. Nothing to out of the ordinary just a typical Saturday in our house.

So last Friday night we made Chili Cheese Fries (pg 64). Ingredients: French Fries, vegetarian chili, hot dogs, onion, and shredded cheddar cheese. I did omit the onion since I'm not a big fan and we also used the large steak fries. I didn't end up eating this for dinner with Scott & the kids since I got a last minute invite to Prime Quarter, however I did take a couple of bites as I was heading out the door and it tasted wonderful! Friday nights are our "unhealthy" dinner nights. Either pizza (home made), burgers (turkey), and fries (baked, not fried usually) or something else that satisfies our salty, greasy needs once a week. This will definitely be made again at some point!

Jalapeno Popper Chicken

Wow! Can you believe the weather we are having?? In 12 days we saw snow and 80 (or at least pretty darn close) degree temperature! It's suppose to stay above average for at least the next week and a half too! Pretty busy around the house, gotta get some garage sale stuff worked on and also we leave for Florida in 17 days! Busy busy!

So last week I made Jalapeno Popper Chicken - from allrecipes.com. I followed the directions pretty much exactly except: my chicken breasts were rather thin so I really couldn't cut a pocket into them to add the mixture, therefore I just folded them in half and put as much of the mixture in between and then added a few tooth picks to each one. After I cooked it for a little while on the stove I realized a bunch of the mixture was falling out so I actually finished up the chicken in the oven. It still produced the yummy crunchy outside but by putting it in the oven I was able to finish cooking the chicken without loosing all of the mixture in the flipping process (I'm a big flipper - I flip very often, lol). Overall this had a really yummy taste and I would definitely make this again!

Mexican Chicken Lasagna

Still have a ton of homework to do today, yuck! But also, I have to take Connor to his 1st Birthday Party and make a pie for dinner tonight at Aunt Missy's - so lot's to do with only a little bit of time to do it in, so why am I posting today with everything I have to do? Cause I want to, lol! That's a good enough reason, right?

So recently we busted out Pampered Chef's Season's Best Fall/Winter 2009 Book and made the Mexican Chicken Lasagna. The ingredients are: fresh cilantro (I just used the dried stuff we had at home), cream cheese, Monterrey jack cheese, onion, enchilada sauce, corn tortillas, and cooked shredded chicken. It was made in the microwave using the Deep Covered Baker (LOVE). Wow was this super good to eat! However, it had to be HOT for me to love it, so once it started getting cold I'd pop it in the microwave for 30 seconds to keep it really hot (I have to have all of my food hot in order to like it). This recipe made enough for us to have it for dinner twice, which is always good as some nights it is hard for us to have time to make a new meal. We will definitely be making this again!
